Spinach, Tomato, & Feta Egg Bites

If you find yourself rushing and scrambling to make breakfast in the morning, or if you’d just enjoy a little extra time before your day starts, why not prep your breakfast ahead of time? These egg bites from coach Emi are the perfect solution!

These are so easy to make and reheat perfectly in the microwave in only a minute. The cottage cheese makes a HUGE difference in texture and prevents the eggs from getting too rubbery when reheated.

In the picture, I used a metal muffin tin, but admittedly even with greasing it my eggs still stuck a bit on the bottom. I purchased a silicone pan from Amazon and it was completely non-stick so if you do make these, I’d pick one of those up.

INGREDIENTS:

  • 9 eggs

  • 1/2 cup spinach, chopped

  • 1/4 cup sun dried tomatoes, chopped

  • 1/4 cup feta

  • 1/2 cup nonfat cottage cheese

  • 1 tsp Italian seasoning

  • 1/2 tsp kosher salt

INSTRUCTIONS:

  1. Preheat oven to 350F

  2. In greased muffin pan, evenly distribute spinach, tomatoes, and feta.

  3. In a medium mixing bowl combine eggs, cottage cheese, Italian seasoning, and salt. Whisk until slightly frothy then pour in to muffin pan until 3/4 full.

  4. Bake for 20-25 minutes. Eat with your favorite hot sauce and some flaky salt!

Makes 12 egg bites, macros per egg bite:

Protein - 6g
Carbs - 3g
Fat - 4g

*if you want to reduce fat, reduce the amount of whole eggs and sub with egg whites.
