Fried Rice Feat. Random Freezer Veg

Quick fried rice with frozen veg for those days that regular rice just won’t cut it.

By keeping some staples on hand you can almost always pack your rice with a ton of flavor. I had a bag of frozen veg, a couple of bags of frozen rice (leftover cooked rice also works great!), jarred ginger and garlic hanging out in the fridge along with their saucy friends and eggs on deck.

The hoisin is just my own personal preference cause I love hoisin. So feel free to omit it! I added some leftover teriyaki chicken on top of this for some extra protein, but if you’re a plant-based eater you could add in edamame and tofu for some extra protons!

INGREDIENTS:

  • 1 tbsp olive oil

  • 1 package frozen veggies (14 oz)

  • 2 packages frozen rice (10 oz each)

  • 2 eggs

  • 1 tsp ginger, minced

  • 1 tsp garlic, minced

  • 1/4 cup soy sauce

  • 2 tsp hoison

  • 1/2 tsp sesame oil

  • Salt and pepper to taste

INSTRUCTIONS:

  1. Heat wok or large skillet over high heat.

  2. Pour in olive oil, then add frozen veggies of your choice. Cook for 4-6 minutes until veggies are heated up thoroughly.

  3. Add garlic and ginger and cook until fragrant, about 1 minutes.

  4. Crack in eggs, stirring quickly to scramble them with the veggies.

  5. Stir in cooked rice.

  6. In a small bowl combine soy sauce, hoisin, and sesame oil. Pour over rice and stir to coat.
