Korean Chicken Tacos
It’s been a minute since we shared a good taco Tuesday recipe, and these “accidental” Korean Chicken Tacos, created by coach Emi have us drooling. Below she shares some important tips, plus the macros!
Spinach, Tomato, & Feta Egg Bites
If you find yourself rushing and scrambling to make breakfast in the morning, or if you’d just enjoy a little extra time before your day starts, why not prep your breakfast ahead of time? These egg bites from coach @emimraule are the perfect solution!
Chicken and Broccoli Stir Fry
This recipe is so quick and easy! You can start your rice up ahead of time — I throw some jasmine rice in my rice cooker, set it and forget it. Cutting the chicken thin and cooking on higher heat makes the process fast, plus it doesn’t dry your chicken out. Not to mention the amazing sauce that packs so much flavor and deliciousness.
Lemon Garlic Chicken and Green Beans
All in, the recipe took less than 30 minutes and I only had to use one pan! You could sub out the chicken tenderloins for chicken breasts or thighs, but make sure to either butterfly your chicken breasts or pound them out a bit in order to make it thin. Chicken gets dried out easily, so I find that using thin slices and cooking at higher temps gets that awesome flavor but keeps it moist.
Jalapeño Watermelon Agua Fresca
This recipe is great for anyone looking to enjoy a refreshing summer mocktail while abstaining from alcohol. While you certainly can add tequila and triple sec if you prefer, I promise it is just as enjoyable without the alcohol.
Fried Rice Feat. Random Freezer Veg
Quick fried rice with frozen veg for those days that regular rice just won’t cut it.
By keeping some staples on hand you can almost always pack your rice with a ton of flavor. I had a bag of frozen veg, a couple of bags of frozen rice (leftover cooked rice also works great!), jarred ginger and garlic hanging out in the fridge along with their saucy friends and eggs on deck.

I’m trying to limit our eating out as much as possible and it’s amazing how much money you can save! While this isn’t quite as good as the real thing, it’s still amazing! (You can see mine in the background with just cheese & bacon cause I’m basic like that).
Arugula Fruit Salad
This is my attempt at copying my wife’s favorite salad, which happens to be from Blaze Pizza!
The balsamic glaze is super versatile so throw it into a small jar and save it for other things as well! I like to keep honey to a minimum in order to bring carbs down, but you could also reduce the balsamic on its own, it will just take longer. Once it cools it will thicken up a bit, so don’t reduce it too much!
Italian Sausage + Kale Scramble
Sometimes it’s hard to add veggies to your breakfast. The best way to do it is to mix it in with other food and let it absorb the flavors! With kale, I find that if you let it cook enough the texture is SO much better, and the bit of fat from the sausage really makes it more flavorful.
With this recipe, you can definitely customize it to fit you best! More or fewer potatoes. Egg whites to increase lean protein. Add in other veggies like bell peppers and onion. Take out the ricotta. I just used what I have in my kitchen, but that’s really the beauty of a scramble!

Lemon Oregano Chicken
Chicken doesn’t have to suck! Marinades are your friend. Sweet, sweet little chicken baths that load it with flavor and juiciness. Whenever I cook a chicken I stick with the tenderloins or thighs — if using full breasts, butterfly them so they’re not as thick! The quicker we can cook these suckers, the better.
One Sheet Garlic Lemon Salmon + Green Beans
I used to be SUPER intimidated to cook salmon since it’s much more expensive than meat and fairly delicate. I was afraid I would completely screw it up all the time. There are times where I don’t cook it exactly how I want to (honestly, while making this recipe I got distracted setting up my camera for photos and cooked it for a minute too long lol). But the thing is, it’s still delicious! And you only get better with practice. If you’re really nervous, try starting off with one fillet and go from there!
Honey Roasted Vegetables with Dijon Vinaigrette
What do you get when you prepare sweet, roasted veggies with the tanginess from a very Dijon-y dressing? Perfection *chefs kiss*
You don’t have to use the pre-cut and trimmed veggies from TJ’s, I just do that for convenience. So if you don’t have access to a Trader Joe’s... don’t fret!
Asparagus Salad
We all get sick of the same old salads sometimes. Luckily, this asparagus salad offers a little something different for the palette. Crisp, blanched asparagus mixed with the sweetness of an orange and the bitterness of browned endives and radicchio will leave a complex yet refreshing taste in your mouth while filling your belly and leaving you wanting seconds.

You can take a ride to flavor town in less than 30 minutes with this bad boy. Protein-packed and delicious.
Mashed Red Potatoes
Who doesn’t love mashed potatoes? This recipe is on the chunkier side, coach Emi likes her’s with some of the skin on to add a bit more texture. The great thing about these is that you can modify the milk and butter to suit your tastes! She used 1% milk in order to keep the fat low, but you can use any milk you like. You can also sub the butter for a vegan alternative, such as earth balance, in case you or any friends/family members aren’t into dairy.
Pistachio & Cranberry Brussels Sprouts
If you think Brussels sprouts have to only taste like freshly mowed grass, THINK AGAIN! The trick is to slice them thinly (or be lazy and buy the pre-shaved ones from Trader Joes as I do) and make sure you slightly burn them. That’s where the magic happens.
Gluten Free Chicken Parmesan with Spaghetti Squash
If you are craving Italian for dinner, then I’ve got you covered. Low carb and GLUTEN FREE. Not to mention, delicious! This was one of the biggest hits I have had with my kids in a while. This one takes a bit of work with breading the chicken, but I promise you, it’s SO WORTH IT!
Gluten Free Green Chile Chicken Enchiladas
Well, these may not be low fat, but they are DELICIOUS. A great option when meal prep gets a bit dull. These are perfect for a rest day! I originally made these guys dairy-free, but the dairy-free options for cream cheese and sour cream were way too high in fat. You can certainly adjust those items if needed.
