Egg Bites

Easiest breakfast meal prep ever! The texture on these is phenomenal. No one likes rubber egg pucks for breakfast (at least I hope not).

INGREDIENTS:

  • 8 egg whites

  • 6 whole eggs

  • 1/2 c. ham, diced

  • 1 c. cottage cheese, 2%

  • 1/2 c. gruyere cheese

  • salt + pepper, to taste

INSTRUCTIONS:

  1. Add all ingredients into a food processor or blender and pulse on high a few times. Don’t blend thoroughly, we like it a bit chunky.

  2. Add 1.5 c of water to the bottom of the instant pot.

  3. Pour into silicone molds about 3/4 full. I use two 9 count egg molds for my 8 qt. Instant Pot. Cover with foil and place in the cooking rack that comes with the Instant Pot. Lower the entire thing into the pot.

  4. Put the lid on and make sure the vent is set to ‘sealing’. Use the steam function for 10 minutes. Let naturally release for another 10 min, then manually release.
