Shrimp & Sausage Foil Packets


  • 1 lb large shrimp
  • 2 chicken sausage links (roughly 14 oz)
  • 1 zucchini
  • 1 yellow squash
  • 1 red onion
  • 1 bunch of asparagus
  • 1 red bell pepper
  • 1-2 tbsp Cajun season
  • 2 tbsp olive oil
  • 1 tsp sea salt
  • 1/2 tsp black pepper 


  1. Roughly chop all of your veggies into moderate sized chunks and place in a large mixing bowl. Slice sausage and add to bowl. Peel and de vein shrimp and also add to bowl. Coat with Cajun seasoning (you can use pre made or create your own! Use 2 tbsp if you want it spicy!) along with salt, pepper and olive oil. Mix well. 
  2. Lay out 3 12x18 foil sheets and add approximately 1/3 of mixture to each sheet. Fold the long edges over, leaving enough room for steam, and then fold the short edges.
  3. Preheat grill or oven to 400° and place foil packets on and let cook for 15-20 minutes. Be careful not to poke any holes in the bottom when removing it!
