Sweet potato egg bites

The whole family will love these! You can change veggies easily to meet your preferences, or simply change the flavor that week! These are great on the go, or when you have busy mornings. They can also serve as a little pick me up during the day.

Ingredients:

  • ~240g cooked sweet potatoes

  • 8 eggs

  • 220g cottage cheese (I like 2% Good Culture)

  • 100g onion

  • 100g zucchini

  • 100g bell pepper

  • 1 tbsp butter (or cooking oil of choice)

  • ½ tsp thyme

  • ¼ tsp pepper

  • ½ tsp salt

  • ½ tsp garlic

Instructions:

  1. Preheat oven to 350°F. Grease a muffin tin and set aside.

  2. Peel and dice sweet potatoes. Boil until soft. Once soft, place ~20 gram in bottom of muffin tin and mash with fork.

  3. While potatoes are boiling, chop onion, pepper, and zucchini into SMALL pieces. Sauté in pan with butter until soft/fragrant. Set aside.

  4. In a blender add 8 eggs, 220g cottage cheese and seasonings. Blend until smooth.

  5. Pour egg mixture over the sweet potatoes, leaving room for vegetables. Add ~25 g of cooked veggies to each muffin cup.

  6. Bake for 20-22 minutes, or until set.

  7. Allow to cool for easier removal
