“Nourish Bowl” Copycat

Try this one if you’re looking to up your unsaturated-fats game. I saw this in an ad for Cafe Zupas and honestly have never even tried it from the restaurant, haha!! It just sounded so good I used it as inspiration, and it’s now become a staple in my rotation. It's very sheet-pan friendly - the chicken, potatoes, and cauliflower all roast at the same temperature. Tip: using foil instead of parchment paper for the roasted veggies helps to keep some browning/charring while still avoiding messy cleanup!
Ingredients:
1lb chicken breast
200g sweet potato, peeled and cubed
1 bag (12oz) of cauliflower florets
1.5 tbsp olive oil
Seasonings: salt, pepper, paprika, italian herb blend
2 cups cooked wild rice
1 small apple (120g), cut into thin slices
100g seedless grapes, cut in half
4oz crumbled goat cheese
56g (2oz) pistachios
8 cups spring mix
4oz Bolthouse Classic Balsamic dressing
Instructions:
Prep your bowl components:
Preheat oven to 400°F.
Season your chicken to preference - I like adding salt, black pepper, paprika, and an Italian herb blend. Place chicken on a baking sheet lined with parchment paper.
Toss sweet potato cubes and cauliflower together in a bowl with the olive oil and seasonings to your preference. Lay this mixture out flat on a second baking sheet lined with foil. With the veggies tossed in oil, they should not stick, but if you’re worried, feel free to spray the foil with nonstick spray if you’d like.
Place the tray with cauliflower and sweet potato in the oven and roast for 35 minutes.
Once you have 20 minutes left on the timer, add the tray with chicken into the same oven. Roast for 15-20 minutes or until internal temperature reads 165ºF. 6. Let chicken rest for at least 5 minutes, then slice into thin strips.
Assemble your bowl (makes 4):
For each bowl, start with a base of 2 cups spring mix.
On top of this add rice, chicken, sweet potato, cauliflower, grapes, apples, goat cheese, and pistachios.
Drizzle with 1 ounce of balsamic dressing and enjoy!
