Italian-Inspired Beef & Green Onion Protein Pasta

Using lean ground beef, protein-enriched pasta, and a simple tomato-herb sauce, this weeknight staple is equal parts satisfying and balanced. Ingredients:
8 oz protein pasta (chickpea, lentil, or protein-enriched)
1 lb lean ground beef (96/4)
1/2 cup green onions, sliced (save some for garnish)
1 small yellow onion, chopped
3 cloves garlic, minced
15 oz can crushed tomatoes (no added sugar)
1/2 cup low-sodium broth (beef or veggie)
1 tsp Italian seasoning
1/4 tsp crushed red pepper flakes (optional)
Salt & pepper to taste
Fresh basil/parsley + Parmesan for garnish
Instructions:
Cook pasta until al dente; drain and set aside.
Brown ground beef in a skillet, drain excess fat. Add yellow onion and garlic; cook until fragrant.
Stir in green onions (save some for garnish), tomatoes, broth, Italian seasoning, and spices. Simmer 8-10 minutes.
Toss pasta with the sauce; let it heat through.
Serve with fresh basil/parsley, reserved green onions, and a sprinkle of Parmesan.
