Apple Pie Protein Waffles

Recipe by: Sabrina

This is a go-to breakfast when you want something warm, comforting, and easy to throw together. The crispy waffle paired with soft, cinnamon-sautéed apples makes it feel a little special without being complicated. It also happens to work really well as a pre-workout meal, especially on mornings you want something delicious and filling.

Ingredients:

Waffles

  • 63g kodiak cake power cake mix

  • 100g pumpkin

  • 100g egg whites

  • Splash of vanilla

  • ¼ cup water

Apple topping

  • 150g honey crisp apple, diced

  • 30g sugar free syrup

  • Dash of cinnamon

  • Sprinkle of salt

  • Splash of vanilla

  • ¼ cup water

Toppings

  • 1 tbsp butter

  • 30g sugar free syrup

Instructions:

To make the waffles:

  • Pre-heat waffle iron

  • Mix waffle ingredients until smooth

  • Recipe makes 2 large waffles in a normal size iron

To make the apple topping:

  • Pre-heat pan, coat with some cooking spray

  • Toss in diced apples and cook down until golden

  • After you've reached golden, add in the rest of your ingredients and cook it down, simmer for 5-10 minutes on low until thick consistency (like apple pie filling)

Butter your waffles (1/2 tbsp on each), top with apple topping and additional syrup and enjoy!
