High-protein Egg Bake

This is an easy to prep, high protein, tasty breakfast. Since this casserole is lower carb and fiber, I typically pair with a carbohydrate, like fruit, to make it a full breakfast!
Ingredients
  • 8 whole eggs
  • 240 g liquid egg whites
  • 225 g low-fat cottage cheese
  • 115 g shredded part-skim cheese (cheddar or mozzarella)
  • 150 g red bell pepper, diced
  • 75 g onion, diced
  • 14 g olive oil
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • ½ tsp smoked paprika
Instructions

Preheat oven to 375°F and grease an 8x8-inch baking dish.

Heat olive oil in a pan over medium heat. Cook onion and red pepper for 4–5 minutes until softened.

In a large bowl whisk together eggs, egg whites, cottage cheese, salt, pepper, and seasonings.

Spread vegetables evenly in the baking dish and pour egg mixture over top.

Sprinkle shredded cheese evenly.

Bake for 30–35 minutes, until the center is set.

Rest & slice.
