Protein Pasta Salad

This is an easy and quick pasta salad without the heavy mayo! It’s perfect for people who can't heat up their lunch/dinner at work or need to eat something on the go that's packed with protein!

Ingredients:

  • 1 box of protein pasta (I used goodles for this)

  • 1 medium cucumber

  • 1 cup cherry tomatoes

  • 1 pepper (I used an orange one)

  • 1/2 cup fresh spinach

  • 1 lemon, juiced

  • 1/3 cup light Italian dressing

  • 1 cup cottage cheese

  • Seasonings you like! I used salt, pepper, garlic & oregano

Instructions:

  1. Boil your water and cook the pasta as directed.

  2. Dice cucumbers, tomatoes, pepper, and spinach.

  3. Drain and rinse the pasta, then add to a bowl with the salad dressing and cottage cheese to coat it (if you don't like the texture of cottage cheese, you can blend this up in a blender with the salad dressing to make it creamy).

  4. Add everything to a big bowl and mix/toss together.

  5. Top with lemon juice & seasonings.

  6. To make this even higher in protein, add chicken!
