Protein Pasta Salad

This is an easy and quick pasta salad without the heavy mayo! It’s perfect for people who can't heat up their lunch/dinner at work or need to eat something on the go that's packed with protein!
Ingredients:
1 box of protein pasta (I used goodles for this)
1 medium cucumber
1 cup cherry tomatoes
1 pepper (I used an orange one)
1/2 cup fresh spinach
1 lemon, juiced
1/3 cup light Italian dressing
1 cup cottage cheese
Seasonings you like! I used salt, pepper, garlic & oregano
Instructions:
Boil your water and cook the pasta as directed.
Dice cucumbers, tomatoes, pepper, and spinach.
Drain and rinse the pasta, then add to a bowl with the salad dressing and cottage cheese to coat it (if you don't like the texture of cottage cheese, you can blend this up in a blender with the salad dressing to make it creamy).
Add everything to a big bowl and mix/toss together.
Top with lemon juice & seasonings.
To make this even higher in protein, add chicken!
