Berry Citrus Cake

This is a frequent pre-run snack for me! It's filling but not heavy. I like to divide the portions and keep them in the freezer for a quick treat. My favorite berry/citrus combination is orange with cherries and blueberries!
INGREDIENTS
1 cup nonfat Greek yogurt
1/4 cup maple syrup
1/2 cup coconut sugar
3 eggs
1 lemon or orange zest
1 tsp vanilla
1/2 cup almond meal
2/3 cup all purpose flour
1/2 cup spelt flour
1/2 tsp salt
1 1/2 tsp baking powder
1 cup mixed berries (cherries, blueberries, raspberries, or blackberries)
INSTRUCTIONS:
Preheat oven to 350°F.
Line 8x8" pan with nonstick spray and parchment paper.
Whisk together yogurt, coconut sugar, and maple syrup.
Whisk in eggs, 1 at a time. Then add vanilla and citrus zest.
Whisk in flours, salt, and baking powder until just combined.
Fold in berries.
Pour into prepared pan and bake for 30-38 minutes.
Let cool, then divide into 9 portions.
