Berry Citrus Cake

This is a frequent pre-run snack for me! It's filling but not heavy. I like to divide the portions and keep them in the freezer for a quick treat. My favorite berry/citrus combination is orange with cherries and blueberries!

INGREDIENTS

  • 1 cup nonfat Greek yogurt

  • 1/4 cup maple syrup

  • 1/2 cup coconut sugar

  • 3 eggs

  • 1 lemon or orange zest

  • 1 tsp vanilla

  • 1/2 cup almond meal

  • 2/3 cup all purpose flour

  • 1/2 cup spelt flour

  • 1/2 tsp salt

  • 1 1/2 tsp baking powder

  • 1 cup mixed berries (cherries, blueberries, raspberries, or blackberries)

INSTRUCTIONS:

  1. Preheat oven to 350°F.

  2. Line 8x8" pan with nonstick spray and parchment paper.

  3. Whisk together yogurt, coconut sugar, and maple syrup.

  4. Whisk in eggs, 1 at a time. Then add vanilla and citrus zest.

  5. Whisk in flours, salt, and baking powder until just combined.

  6. Fold in berries.

  7. Pour into prepared pan and bake for 30-38 minutes.

  8. Let cool, then divide into 9 portions.
