Beef & Broccoli
Recipe by: Ryann
Beef and broccoli is my ultimate comfort meal. It's incredibly easy to whip up and prep in bigger batches for future meals. I honestly prefer this recipe compared to my local restaurant options!
Ingredients:
Beef Marinade:
1 pound of flank steak
5g of cornstarch
5g of lite soy sauce (or coconut aminos for less sodium)
3g of baking soda
5g of ginger (peeled)
5g of garlic
5g of avocado oil
Sauce and Broccoli:
10oz of beef bone broth
10g of lite soy sauce (or coconut aminos)
10g of brown sugar
5g of toasted sesame oil
5g of ginger (peeled)
5g of garlic
White pepper to taste
5g of avocado oil
100g of broccoli
10g of cornstarch
Optional Toppings:
Green onions
Sesame seeds
Instructions:
Slice flank steak thinly against the grain (freeze 30 minutes first for easier slicing).
In a bowl, combine soy sauce, oil, baking soda, cornstarch, garlic, and ginger. Add steak and marinate 30 minutes to 6 hours.
In a separate bowl, whisk soy sauce, brown sugar, sesame oil, garlic, ginger, and white pepper to taste.
Heat avocado oil in a pan or wok over high heat. Add beef in a single layer without overcrowding and cook about 3 minutes before stirring to cook through. Remove to a plate.
In the same pan, sauté garlic and ginger. Add bone broth to scrape up browned bits, then stir in broccoli. Pour in the sauce and bring to a boil.
Mix cornstarch with a little water to make a slurry, then add to the pan. Simmer until thickened. Return beef to the pan and toss to coat.
Serve over white rice with desired toppings.
