Cheesy Turkey Rigatoni

Ingredients:
8 ounces Rigatoni, dry weight
1 Tbsp olive oil
1 lb extra lean ground turkey
1 sweet onion, diced
5 cloves of garlic, minced
2 Tbsp flour
1 cup beef broth
15 ounces marinara sauce
1/2 tsp dried oregano
1/2 tsp paprika
1 tsp dried parsley
184 grams 2% or fat free greek yogurt with 2 Tbsp skim milk added to thin.
3 Tbsp light sour cream
1 1/2 cups reduced fat cheddar cheese
salt and pepper to taste
Fresh parsley, mined for garnish (optional)
Instructions:
Salt water liberally and bring to boil. Cook pasta to al dente according to package instructions.
Heat olive oil in a large skillet.
Brown ground turkey over medium high heat until cooked through. Then set aside.
Using the same skillet, cook onion until translucent. Then add garlic and continue to cook for 1 minute working to avoid burning the garlic.
Add flour and combine cooking until browned.Slowly add beef broth in order to thicken.
Mix in the marinara sauce until combined.
Add seasonings and stir.
Add cooked pasta and coat with the sauce. Gently mix in the cooked ground turkey.
Mix in yogurt and skim milk mixture. Mix in sour cream.
Fold in the cheese.
