Bacon Wrapped Sweet Pepper Poppers

Everyone has had jalapeno poppers, but not everyone loves the heat. Cooking for parties and holidays means accommodating a large variety of pallets. These sweet pepper poppers are our twist on a crowd favorite, sans the spice. Great for kids!

Makes 20-30 poppers.

INGREDIENTS:

  • 10 pieces of bacon, cut in half lengthwise

  • 1 bag of mini sweet peppers

  • 1 package of light cream cheese

  • 1 block of fresh parmesan cheese

DIRECTIONS:

  1. Preheat oven to 400 degrees.

  2. Cut the tops of the mini peppers off and slice parmesan cheese into pieces small enough to take up around half of the inside of the pepper.

  3. Stuff each mini pepper about half full with light cream cheese, then stuff a parmesan sliver down into the middle of the cream cheese to fill the pepper.

  4. Wrap each pepper with a strip of bacon, then place on a foil lined baking pan.

  5. Cook for 15 minutes then broil for 5 to crisp bacon. Remove from oven and serve immediately while hot. Enjoy!
