Cherry Almond Oat Muffins

Ingredients:

  • 1 3/4 cups flour

  • 1/2 cup rolled oats

  • 1 1/2 tsp. baking powder

  • 1/4 tsp. salt

  • 1/2 tsp. vanilla extract

  • 1 1/4 tsp. almond extract

  • 2 cups canned in water tart cherries, drained and diced in a blender

  • 3/4 cup pumpkin pureé

  • 3/4 cup honey

  • 1/4 cup organic sugar

  • 2 large eggs

  • Frozen berries and sliced almonds for garnish.

Directions:

  1. Preheat oven to 350ºF

  2. Combine flour, baking powder, rolled oats and salt in a bowl.

  3. In a mixer, combine eggs, pumpkin, sugar, honey and extracts.

  4. Fold in cherries.

  5. Fill muffin tins with paper or silicone muffin tin 3/4 of the way up.

  6. Top with frozen berries.

  7. Bake in 350º oven for 20-25 minutes until a toothpick comes out clean. 

  8. Let cool on a wire rack.

  9. Top with sliced almonds.
