Poke Bowl


  • 4oz Cubed Sushi Grade Ahi Tuna
  • 50g Diced Cucumber
  • 1 serving (45g) of white rice
  • 28g Sliced Radish
  • 14g Shredded Red Cabbage
  • 14g Shredded Carrots
  • 28g Kale
  • Green Onion (for topping) 

Ingredients for the marinade:

  • 1 tsp Minced Garlic
  • 1/4 tsp Sesame Oil
  • 1 tbsp Riced Wine Vinegar
  • 1 tsp Chili Garlic Paste
  • 2 tbsp coconut aminos


  1. In a bowl, whisk together all of the ingredients for the marinade, add the tuna and cucumber, cover and lets sit in the fridge for at least 1 hour. 
  2. Cook 1 servings of white rice on the stove or in rice cooker.
  3. Once the rice is cooked and the tuna and cucumbers are marinated start layering your bowl! 
  4. Put the rice on the bottom, add in the tuna, cucumbers, radish, red cabbage, carrots, kale and green onion.
