Grilled Vegan Skewers

Ingredients (for the skewers):

  • 4 cups mixed bell peppers cut into large chunks

  • 2 cups chopped mushrooms

  • 2 red onions cut into large chunks

  • 1 pack high protein extra firm tofu cut into 1 inch cubes

  • 1 bag of Beyond Meat’s lightly seasoned “chicken” strips cut into pieces

  • 10 golden potatoes cut into small rounds

Ingredients (for the lime juice mixture):

  • Juice from 6 limes

  • 2 tbsp of liquid aminos

  • 1/2 tsp sea salt

  • 2 tsp cracked pepper

  • 2 tsp chili powder


  1. Build your skewers (I made 14 tofu skewers and 10 "chicken" skewers)

  2. In a small bowl mix together all of the ingredients for the lime juice mixture

  3. Turn grill onto medium-high. Place skewers directly on the grill and coat with the lime juice mixture.

  4. Rotate the skewers and grill until the potatoes are cooked through, veggies are tender and the tofu/chicken are slightly charred.
