No Food Prep: Veggie Edition
Vegetables are packed with micronutrients (vitamins and minerals) that are responsible for a lot of our bodily functions. They affect our mood, energy levels, how our muscles/organs function, how we sleep, and so much more. Red veggies help with heart health, yellow with skin health, orange with inflammation, green with cleansing your body, blue/purple veggies supply you with antioxidants, and white veggies help your immune system (the same goes for fruit by the way!).
A lot of people struggle with finding recipes to cook vegetables, and they can be even more time consuming to prep. Here are some options to help you get more veggies in your diets with the least amount of effort and work.
LOTS of frozen, steam-able veggies in the frozen food aisle!
TRADER JOE’S/SPROUTS:
There are SO many options at these two stores
Frozen rainbow cauliflower (super easy to cook, just toss in a pan for 10 mins and stir occasionally)
Microwavable broccoli florets
Riced cauliflower
Frozen microwavable mushrooms
Microwavable frozen asparagus, and more

Beet spirals
Zucchini spirals
Butternut squash spirals

A veggie platter works too! Carrots, peas, celery, grape tomatoes, pre-cut broccoli.
MANN’S VEGGIES:
All pre-cut broccoli, cauliflower, carrots
Toss on a baking sheet lined with parchment paper. Season and roast for 20-30 mins or until done. Some of these are even steam-able in their bags.
The peas you can eat right out of the bag.

Lots of stores have pre-made salads too
Spinach and romaine lettuce require zero prep - maybe a quick chop.
Bonus - you can saute spinach in only a few minutes!
