Spicy Tuna Nori Bake

This meal is a one pan wonder. Japan was a foodie culture for sure and this easy meal prep takes me back to my travels there!
Ingredients
  • SEASONED RICE
  • 1.5 cups uncooked short-grain rice
  • 1 tbsp rice vinegar
  • 2 tsp sugar
  • ½ tsp salt
  • SPICY TUNA MIXTURE
  • 3 cans tuna (5-6oz each), drained
  • 4.5 tbsp Japanese mayo or mayo
  • 1.5 tbsp sriracha
  • ¼ teaspoon salt
  • SUSHI BAKE
  • 10 sheets nori, cut in half
  • 4 ripe avocado, thinly sliced
  • 2.5 tbsp Japanese mayo or mayo
  • 2.5 tbsp sriracha
  • 1 green onion, finely chopped
  • Sesame seeds & furikake, optional
  • 1 tsp neutral oil, for greasing dish
Instructions

Preheat oven to 500°F and lightly grease a 9x9 baking dish.

Cook rice according to package instructions.

While hot, mix rice with salt, sugar and rice vinegar and press evenly into the dish.

Sprinkle sesame seeds and furikake over the seasoned rice (if using)

In a bowl, mix drained tuna with mayo, sriracha, and salt. Spread evenly over the rice.

Layer sliced avocado over the tuna. Drizzle with additional mayo and sriracha.

Broil for ~10 minutes, until bubbling and lightly golden.

Garnish with green onions.

Slice with a wet knife into 20 pieces and serve on nori sheets.
