Chicken Adobo
This is a recipe that’s been in my family (from my aunt) for many, many years. It’s super simple to prepare, and both adults and kids enjoy it! It’s super customizable, so you can pair it with various styles of rice and vegetables. Even though it’s only a few ingredients, it’s packed with a ton of flavor and high in protein. It takes an hour to make, but all you need to do is dump all of the ingredients in a pot and let it cook for the hour. Enjoy!
Ingredients
- 3 lbs skinless chicken thighs (can use bone-in or boneless)
- 4 cloves garlic, crushed or minced
- ½ cup vinegar
- ½ cup soy sauce (scant)
- 2 bay leaves
- Fresh ground pepper
- 1 tsp brown sugar
Instructions

Add everything to a pot, minus the brown sugar. Stir in the pot to blend.

Bring to a boil and add 1 tsp brown sugar.

Reduce to simmer and cover. Simmer for 1 hour, stirring occasionally. 30 minutes in, flip the chicken.

Serve with rice and vegetables.
