20-minute salmon bowl

I love a good salmon and rice bowl, or poke bowl, so this is my go-to dinner when I’m craving something quick and have nothing prepped.

Ingredients:

  • 1 salmon filet

  • 1 tbsp sweet chili sauce

  • 45g rice (dry weight)

  • 85g shredded carrots

  • 50g steamed shelled edamame

  • ½ avocado

  • 2 sheets of seaweed snacks

  • 1 tbsp sriracha mayo

Instructions:

  1. Bring 1/2 cup of water to a boil. Pour in rice and turn down heat to low. Cover pot and cook for 10 minutes or until water is completely absorbed. (Or cook rice in a rice cooker if you have one).

  2. Coat salmon in sweet chili sauce and broil for 7-10 minutes or cook in air fryer. Time will vary depending on size of filet.

  3. Cook edamame (I like the steamable frozen bags that you can just pop in the microwave).

  4. Add all the ingredients together in the bowl. Enjoy!
