Tomato, Avocado, & Balsamic Cottage Cheese Toast

This cottage cheese toast layers creamy avocado, fresh tomato and onion, and a drizzle of balsamic glaze on sourdough for something that feels elevated but takes less than 10 minutes. At 534 calories and 30g of protein per two slices, it's easily adjustable to fit your macros whether you're having it as a snack or sitting down for a meal.

Ingredients:

  • 100g sourdough (~two slices)

  • 50g avocado

  • 138g low fat cottage cheese

  • 40g diced tomato

  • 10g diced red onion

  • 5g balsamic glaze

  • Salt & pepper to taste

Instructions:

  1. Toast your sourdough

  2. Mash avocado evenly across slices

  3. Top with cottage cheese (if you have extra that doesn't fit, have it on the side!)

  4. Top with tomato and onion

  5. Finish with balsamic glaze

  6. Salt & pepper to taste
