Anderson Macro Machines Southwestern Cheesy Potatoes

Ingredients:

  • 4 lbs 96% lean ground beef (or meat/lean % of your choice)

  • 1 red onion, chopped (297g)

  • 1 yellow onion, chopped (376g)

  • 2 Trader Joe's Taco Seasoning Mixes (or 72g)

  • 1 bag of Trader Joe's Organic Super Sweet Cut Corn (or 450g)

  • 1 bag of Trader Joe's Melange A Trois Bell Peppers Strips (or 425g)

  • 2 cans (or 396g) of diced mild green chiles

  • 1 bag (or 198g) of Kraft Fat Free Shredded Cheddar Cheese (or increased fat of your choice)

  • 2 jars of Trader Joe's Queso Cheese Dip (or 652g)

  • 2 bags of Trader Joe's Shredded Hash Browns (or 1134g)

Instructions:

  1. Preheat oven to 350 degrees

  2. On the stovetop brown the ground meat

  3. While browning, add the chopped red and yellow onions. I also recommend adding 1-2 cups of water.

  4. Before meat is completely brown, add the taco seasoning

  5. Spray 2, 9x13 glass pans with cooking spray

  6. Divide the bag of Trader Joe's Organic Super Sweet Cut Corn between 2 pans, spread evenly

  7. Divide the bag of Trader Joe's Melange A Trois Bell Peppers Strips between 2 pans, spread evenly

  8. Add a can of diced mild green chiles to each pan (2 cans total), spread evenly

  9. Divide the bag of Kraft Fat Free Shredded Cheddar Cheese (or increased fat of your choice) between 2 pans, spread evenly

  10. Divide seasoned ground meat with onions between the 2 pans

  11. Add a jar of Trader Joe's Queso Cheese Dip to each pan (2 jars total), spread evenly

  12. Add a bag of Trader Joe's Shredded Hash Browns to each pan (2 bags total), spread evenly

  13. Place the pans in the oven for 30-40 minutes at 350 (or until potatoes are golden brown)

  14. Allow to cool. Cut 6 even squares from each pan
