Jalapeno & Kale Tacos


  • 3 corn tortillas 

  • A quarter block of extra firm, high protein tofu

  • 1 cup of kale 

  • 1/4 cup onion

  • 1/4 cup jalapenos 

  • 1/2 tsp chile lime seasoning blend from trader joes

  • 1/2 tsp onion powder 

  • 1/2 cup of salsa (I used a roasted verde) 

  • 1 lime 

  • Your favorite hot sauce  


  1. Remove as much water as possible from the tofu

  2. Crumble the tofu using your hands or a fork, into a pan. Add in the onion powder and the chile lime seasoning.

  3. Cook the tofu on medium heat, until it’s at your desired texture. I like mine slightly golden brown. Add in the salsa and kale and cook for another 3-5 minutes.

  4. You can bake or fry your tortillas. I personally cook mine in a pan with avocado or olive oil on medium heat. 

  5. Fill your tacos and top them with, onion, jalapenos, lime juice, and your favorite hot sauce.
