Jalapeno & Kale Tacos
3 corn tortillas
A quarter block of extra firm, high protein tofu
1 cup of kale
1/4 cup onion
1/4 cup jalapenos
1/2 tsp chile lime seasoning blend from trader joes
1/2 tsp onion powder
1/2 cup of salsa (I used a roasted verde)
Your favorite hot sauce
Remove as much water as possible from the tofu
Crumble the tofu using your hands or a fork, into a pan. Add in the onion powder and the chile lime seasoning.
Cook the tofu on medium heat, until it’s at your desired texture. I like mine slightly golden brown. Add in the salsa and kale and cook for another 3-5 minutes.
You can bake or fry your tortillas. I personally cook mine in a pan with avocado or olive oil on medium heat.
Fill your tacos and top them with, onion, jalapenos, lime juice, and your favorite hot sauce.
