Protein Packed Chicken Pot Pie

The Anderson Macro Machines (aka Zach Anderson and Laura Anderson) are back at it with another epic recipe! This chicken pot pie is packed with protein, easy to prepare and ready in less than an hour. A delicious fall dinner that you can enjoy all week.

One pan (makes six servings)

Macros per serving: 7g fat, 35g carbs, 29g protein

  • 1 bag Trader Joe’s frozen peas (thawed in fridge)

  • 1 bag Trader Joe’s foursome frozen veggies (thawed in fridge)

  • 2 pounds Costco rotisserie chicken

  • 1 can reduced fat cream of mushroom/celery (or your choice)

  • Lightly dust with dry ranch dressing seasoning, Italian seasoning, and oregano

  • 1 cup Kodiak cakes any kind (recommend super foods, gluten free, or buttermilk; after mixing, let sit 5 minutes before pouring over)

  • Cook 30 to 40 minutes at 350° until top is golden brown
